Hot and spicy rice with a “Chicken and Sausage Heart”, dipped in the tasty and nutritious “Ortolana Sauce” with black beans, potatoes and cherry tomatoes, with a fresh lime aroma…Those who love the “spicy” taste in life also love the taste of Fiesta Mexicana Risotto!
450g Basmati rice; 3 Chorizo sausages; 1 chicken breast; 250g fresh black beans; 4 cherry tomatoes; 2 white potatoes; 1 celery stalk; 2 small white onions; 1 tsp lime; 2 red garlic cloves; 1 sprig of parsley; 1 spicy red chilly, diced; extra virgin olive oil; 4 bay leaves; 1 pinch of cinnamon; salt and pepper, to taste.
“Chicken and Sausage Heart”
Wash all vegetables. Dice the chicken breast and boil in a pot of salted water with the celery stalk, half of the onion, the parsley and 2 cherry tomatoes. Remove from the heat. Remove the boiled chicken and place on a separate tray, while leaving the stock with the vegetables in the pot and set aside. Peel the Chorizo sausages and dice them. In a separate pan place 3 tablespoons of extra virgin olive oil, 1 onion and 1 garlic clove, both finely diced, and cook until browned. Add the boiled chicken breast, the sausage and stir in salt and pepper to taste. Cook on low heat until the chicken and sausage are golden and crunchy. During the cooking, sprinkle with the lime. Once ready, remove from the heat and set aside. Keep the pan covered.
Soak the black beans overnight, then rinse and drain them. Boil the potatoes in plenty of boiling water, remove them from the heat, rinse them off and cut into thin discs. Place them on a separate tray and set aside. Place 1 tablespoon of extra virgin olive oil in a pan, add the red chilli, half the onion and garlic, finely diced, and saute them. Stir in 2 diced cherry tomatoes and the black beans and allow to cook for 2 minutes. Add the vegetable stock and the potatoes, stir and allow to cook on low heat for 45 minutes.
Cook the rice in a pot, in plenty of salted boiling water. Place the “Chicken and Sausage Heart” in a earthenware pot with a little oil and mix. Add the rice and stir and finally add the “Ortolana Sauce”. Continue mixing and cook for a further 3 minutes.
Serve the Fiesta Mexicana Risotto in the earthenware pot while still hot. Before serving, sprinkle the rice with a little oil, the cinnamon and decorate with the bay leaves.
Serve with a glass of Verduzzo white wine.
